- Avocado Oil Spray
- Salted Butter
- Salt and pepper to taste

Instructions to Make Roasted Tri-Color Carrots
- Peel and clean Tri-colored carrots
- place on a baking sheet lined with parchment paper
- Spray with hight heat oil, I use avocado oil
- Roast for approximately 25 minutes (depending on the size of your carrots) at 350 degrees Fahrenheit
- Remove carrots from the oven and glaze immediately
- Add salt and pepper to taste
- Serve!
Roasted Carrot Butter Glaze
for the butter glaze simply melt 4 tablespoons of salted butter on the stove until completely liquid.
Hint: Brush butter onto carrots using a pastry brush
Substitutions
This recipe is equally delicious with some substitutions
- Carrots - If you can't find tri-colored carrots this recipe is equally as delicious using regular carrots
- Butter- If you use unsalted butter make sure to salt the finished dish appropriately the salt actually brings out the sweetness of the carrot.

Where to Find Tri-Colored Carrots
Tri colored carrots used to be a seasonal item, but recently I have seen them at many grocery stores, including Trader Joes. I personally like to grow my own heirloom varieties for tri-color or rainbow carrots. There is nothing better than cooking what you grow!
