Delicata squash is delicious, a definite house hold favorite. It's versatile and simple. As I mentioned before delicata has been coined the "sweet potato" squash because of it's pleasing sweet flavor and creamy texture. It's great as a side dish, or even as one of babies first foods (always remove skin or blend well for this). When roasted this squash gets a caramelized coating that pairs well with it's sweet and creamy texture.
How to roast delicata squash
- turn your oven to 350 degrees fahrenheit
- Cut the delicata squash lengthwise into two halves
- Clean out the seeds with a soup spoon
- Turn the squash onto the flat cut side and slice into ½ inch crescent moons
- Place squash on a baking sheet with parchment paper to avoid sticking
- Toss squash with avocado oil salt and pepper
- Roast for 20-25 minutes (depending on your oven) until pieces are golden brown.
- Remove from oven plate and enjoy!

- 4 medium sized Delicata Squash
- 1 tbs Avocado Oil
- pinch of salt - to taste
- Pepper- to taste
Instructions
- Pre heat your oven to 350 degrees fahrenheit
- Wash and dry delicata
- Cut the top of the squash off (with the hard stem)
- Cut the squash lengthwise into two halves
- Clean out the seeds with a soup spoon
- Turn the squash onto the flat cut side and slice into ½ inch crescent moons
- Place squash on a baking sheet with parchment paper to avoid sticking
- Toss squash with avocado oil salt and pepper
- Roast for 15-20 minutes (depending on your oven) until pieces are golden brown and fully cooked.
- Remove from oven, plate and enjoy!
